This cherished fruitcake recipe traveled with my grandmother when she and her family emigrated from Russia in the early 1900s. As a young girl in Pennsylvania during the 1920s, where many European immigrants had settled, she learned the art of baking a delicious white fruitcake from her mother.
Unlike traditional dark fruitcakes, this version excludes molasses, resulting in its characteristic light color and name. Back in those days, this fruitcake was a Christmas tradition, as many ingredients like walnuts and cherries could only be gathered or prepared in the fall. Everything was crafted from scratch: from drying raisins to shelling walnuts and candying cherries.
Continuing this tradition, I only make and sell this fruitcake during the Christmas holidays. In my opinion, it’s simply the best you can find. Gather your ingredients, ensuring they're all at room temperature, and let’s get started:
Ingredients
- 1 pound butter- 12 eggs
- 1 pound sugar
- 1 pound flour
- 1 pound white raisins
- 1 pound walnut meats
- 1 pound red and green candied cherries
- 1 pound baker's flaked coconut
- 1 pound candied pineapple
- 1 tablespoon baking soda dissolved in 1 cup warm water
- 2 cups brandy (any brand)
Instructions
1. Prepare Ingredients: Soak the raisins, walnuts, cherries, coconut, and pineapple in 2 cups of brandy overnight in a stainless steel bowl.2. Mix Batter: In a 5-quart mixing bowl, cream the butter and sugar. Gradually add the eggs, then blend in the flour. Mix in the dissolved baking soda. Finally, incorporate all soaked and remaining ingredients, blending well.
3. Bake: Preheat your oven to 350°F (175°C). Line your chosen pan with wax or baking paper. For a 2-pound pan, spoon in 1 pound 12 ounces of the mixture, leveling it gently with a spoon. Bake for 1 to 1 hour and 20 minutes, depending on your oven and desired browning. The cake is done when a toothpick inserted in the center comes out clean.
4. Finish: Allow the cake to cool on a rack. Sprinkle with 1 ounce of brandy while warm, and another ounce once cooled. Store it in the refrigerator for about 3 days to enhance the flavors.
