A few years ago, I was asked by a magazine editor to select the top 10 foods for families. The challenge was daunting because no single food contains everything the body requires, and each food offers a distinct blend of nutrients. That's when I conceived the idea of "magic carpet" foods?"foods that are valuable because they carry other nutritious items with them.
One of my favorite magic carpet foods is breakfast cereal. A fortified cereal like Whole Grain Total is excellent by itself, providing fiber and 100% of your daily value for 12 different vitamins and minerals. When you top it with milk and fresh fruit or layer it in a parfait with yogurt, berries, and nuts, you create an even more nutritious meal.
Pizza crust is another go-to because it can support a variety of toppings. You can either make your own or use store-bought dough or pre-baked crust. Spread with tomato sauce, which is rich in lycopene, it becomes a powerful health booster. Georgia Kostas, M.P.H., R.D., L.D., and author of "The Cooper Clinic Solution to the Diet Revolution," suggests decorating your crust with plenty of vegetables. She notes that eating 4 1/2 cups of fruits and vegetables daily provides antioxidants, fiber, and phytonutrients, which may lower the risk of heart disease by reducing cholesterol oxidation and arterial hardening.
Pasta also ranks highly on my list, thanks to its endless combination of toppings and "mix-ins." Consider using lycopene-rich tomato sauce, protein-packed lean ground meat or poultry, grilled salmon and other fish, reduced-fat ricotta cheese or grated cheese for protein and calcium, heart-healthy nuts like walnuts, and, of course, vegetables. Experiment with different pasta varieties such as whole wheat spaghetti, Japanese thin buckwheat soba, Asian rice noodles, and even spaghetti-like squash.
Other foods on my list include soup, whole grain bread, baked potatoes, and corn tortillas. What foods would make it onto your list?
