Turning Sucrose into Acid
Streptococcus mutans ferment carbohydrates and sugars into lactic acid, much like grapes are turned into wine. This acid decreases the pH level in your mouth, particularly after consuming sweet foods like candy.

While many bacteria can be washed away by saliva, S. mutans use sucrose to create polysaccharides?"a sticky substance. This sticky coating allows them to adhere to tooth enamel, forming dental plaque.
Plaque not only harbors bacteria but also protects them from saliva, which could neutralize the acid. As a result, the acid directly attacks the teeth.
Storing Sucrose
Plaque rapidly breaks down sucrose, increasing lactic acid levels. Unfortunately, S. mutans can store sucrose to use when sugar intake is low, prolonging acid production.
How Xylitol Helps
