Red Wine
The process begins by de-stemming the grapes, removing them from their shoots. Once de-stemmed, the grapes are pressed into a paste, releasing the juice, known as "must." This must mixes with the grape skins and pulp in a cask, where the duration of contact influences the wine's character.
When the winemaker deems it ready, the juice is separated, and yeast is added to start fermentation. The leftover pomace often returns to the vineyard as fertilizer. Once the desired color and sugar levels are achieved, the cask valve is opened, and the best quality juice is siphoned into other containers to complete fermentation.
Pressed wines, rich in tannin and color, are made from these solids and blended with the first juice to create diverse strengths and flavors. After fermentation, the wine is either bottled immediately or allowed to age.
White Wine
For white wine, grapes are handled gently and quickly placed into receiving bins, then transferred to a press to separate the must from the skins and solids. The solids are discarded, and the must is slightly chilled before being moved to a stainless steel vat to ferment. Temperature is crucial here to preserve the wine’s delicate aromas.
After fermentation, the wine is carefully decanted to eliminate sediment and then bottled. White wine is best enjoyed within two years.
Sweet Dessert Wines
Dessert wines are crafted using one of two methods. The first involves Botrytis Cinerea, a fast-growing fungus that changes the fruit's color and alters its acid and sugar levels. The second method interrupts fermentation by adding alcohol, resulting in a strong, sweet wine with a pronounced grape flavor.
White Moscatel and Garnacha grapes are typically used for sweet wines, giving them a distinctive mushroom aroma when opened.
