Shrimp in Spicy Mustard Sauce
Ingredients:
- 12 oz. shrimp, peeled and deveined- 2/3 cup fat-free milk or a substitute like evaporated skim, regular skim, low-fat milk, or soy milk
- 2 tablespoons Dijon mustard
- 1 teaspoon curry powder
- 1 teaspoon cumin
- 1 teaspoon black pepper
- 1 teaspoon lemon juice
- 1 teaspoon chicken bouillon powder or 1 cube
- 1 tablespoon olive oil
- 1 onion, minced
- 4 garlic cloves, minced
- Parsley
- Parmesan cheese (optional)
Instructions:
1. Prepare the shrimp by peeling and deveining them.
2. In a measuring cup, combine milk, mustard, and seasonings. If using a milk substitute, mix a bit with a tablespoon of cornstarch to thicken later.
3. In a skillet, heat the oil over medium-high. Add shrimp, onion, and garlic, stirring constantly until the shrimp turn pink (about 2-3 minutes).
4. Pour the milk mixture into the skillet and cook, stirring constantly until it boils. Reduce heat to low and let it simmer until slightly thickened (about 1-2 minutes). Add cornstarch mixture if using.
5. Use a slotted spoon to transfer shrimp to a serving platter.
6. Increase the heat to medium-high and continue cooking the sauce until it reduces by half (about 5 minutes). Pour the sauce over the shrimp and sprinkle with parsley and optional Parmesan.
