- 1/2 teaspoon salt
Instructions
1. Cook the Potatoes: In a large pot of salted, boiling water, cook the potatoes until fork-tender. Drain and set aside.
2. Cook the Bacon: Fry the bacon until crispy, then crumble it, reserving two tablespoons of the drippings.
3. Prepare the Dressing:
In a medium bowl, mix together all dressing ingredients. For a thinner consistency, add small amounts of liquid from the pickle jar.
4. Assemble the Salad:
While the potatoes are still warm, cut them into small chunks. In a deep glass bowl, layer one-third of the potatoes, eggs, and onions. Top each layer with one-third of the dressing. Repeat this process two more times, finishing with the dressing.
5. Finish and Serve:
Top the salad with crumbled bacon and blue cheese.
