Indian Tandoori Cooking
Discover the Tandoor
Tandoori cooking is a hallmark of Indian cuisine, traditionally using a tandoor, an oval-shaped clay oven. This unique cooking method involves a small fire at the base, allowing heat to rise and achieve higher temperatures than a conventional barbecue.
What is a Tandoor Used For?
In a tandoor, naan bread, meats, and kebabs?"either meat or paneer?"are typically cooked. The bread sticks to the oven’s sides, kebabs are positioned vertically, and whole chickens rest on a grid over the fire.
Tandoori Cooking at Home
While owning a tandoor might not be practical for home use, you can easily recreate tandoori dishes using a barbecue or oven. The vivid red hue of tandoori meats often seen in restaurants results from food dye, which is unnecessary to enhance their delicious appearance.
The Delight of Tandoori Flavors
I am particularly fond of tandoori-style food for its rich flavor. It’s not overly spicy, high in calories, or too filling, making it a perfect choice year-round. Additionally, it's quick to prepare. While pre-made mixes are available, I believe using individual spices offers more versatility and better flavor.
Easy Tandoori Chicken Recipe
You can craft delightful dishes like tandoori chicken, lamb chops, or lamb tikka. My personal favorite, however, is chicken tikka due to its simplicity. Here’s my recipe to serve two:
Ingredients
- 2 chicken breasts
- 1 small tub Greek yogurt
- 1 tsp ground cumin
- 1 tsp ground coriander
- ½ tsp ground turmeric
- ½ tsp ginger powder
- ½ tsp chili powder (adjust to taste)
- 1 small clove garlic, crushed
- Salt to taste
- 1 tbsp lemon juice
Instructions
1. Prepare the Chicken: Cut the chicken breasts into 1-inch cubes and set aside.
2. Create the Marinade: Mix the spice powders and garlic into the yogurt. Use low-fat yogurt if preferred. Fresh ginger or ginger paste can replace the ginger powder?"just don't overdo it.
3. Marinate: Optionally, add salt and lemon juice now, but if doing so, limit marinating to 20 minutes to prevent the chicken from drying out. For longer marination, add salt and lemon juice just before cooking or serving.
4. Cook: Thread the chicken onto skewers and barbecue or grill using medium heat until slightly browned and cooked through.
Serving Suggestions
For a light meal, pair with salad, pita or naan bread, and lemon wedges. For a heartier meal, serve with rice and dahl.
