- 4 oz sharp cheddar cheese, finely grated
- 1 tsp Worcestershire sauce
- 3 drops hot pepper sauce
- 1 tsp whole-grain mustard
- 4 Tbsp dark beer or stout
Instructions
1. Prepare the Gouda: Using a sharp knife, slice a 1-inch thick lid off the Gouda ball. Set the lid aside. Carefully hollow out the cheese, ensuring the walls are as thin as possible. Grate the scooped-out Gouda and set aside.
2. Cook the Onion: In a small skillet, melt 2 Tbsp of butter over medium heat. Add the chopped onion and sauté until golden brown, about 7-10 minutes, stirring often. Remove from heat and let cool.
3. Make the Dip: In a food processor, combine the grated Gouda, Roquefort, and Cheddar cheeses with the remaining butter, sautéed onions, Worcestershire sauce, mustard, and hot pepper sauce. Blend until smooth, scraping the sides as necessary. Gradually add the beer and continue processing until the mixture is creamy.
4. Assemble: Fill the hollowed-out Gouda ball with the cheese mixture. If there's extra, place it in a separate bowl. Cover both with plastic wrap and refrigerate for at least 4 hours.
5. Serving: For best flavor, make the dip a day ahead. Before serving, let the Gouda ball come to room temperature. Use the extra dip to refill the cheese ball as needed.
