Ingredients:
- 1/2 pound linguica, Italian, or Polish sausage, sliced 1/4-inch thick
- 2 tablespoons extra virgin olive oil
- 1 medium onion, chopped
- 2 large garlic cloves, minced
- 1 1/2 cups long-grain white rice
- 3 cups chicken stock
- 1 cup Mirassou Monterey County Riesling
- 1/4 teaspoon saffron (or 1/4 teaspoon ground turmeric and 1/8 teaspoon paprika)
- 2 ripe tomatoes, seeded and diced
- 9 oz. package frozen artichoke hearts, thawed and halved
- 1 small red bell pepper, diced
- 8 mussels
- 8 hard-shell clams
- 16 medium prawns, peeled and deveined
- 1/2 cup fresh or frozen peas
Instructions:
1. Brown the sausage in a large stainless steel pan over medium heat for 10 minutes, stirring often. Remove and set aside.
2. Add olive oil to the pan and sauté the onion and garlic for 5 minutes.
3. Add rice and cook until translucent, about 5 more minutes. Stir in stock, wine, saffron, and sausage.
4. Bring to a boil, then reduce the heat and simmer uncovered for 15 minutes. Season with salt and pepper.
5. Top with tomatoes, artichokes, and bell pepper. Add seafood to the rice surface. Cover and simmer on low for 10 minutes, until mussels and clams open and prawns turn pink.
6. Stir in peas and cook for 1 additional minute.
Note: Discard any mussels or clams that do not open.
