Bread: A Touch of Tradition for Easter
Bringing Back Tradition
When European immigrants arrived in America, they brought rich Easter bread traditions with them. While today's Easter celebrations are often marked by chocolate bunnies and colorful candies, there's a deeper symbol of the holiday: traditional Easter bread.
A Culinary Mission
Father Dominic Garramone, a Catholic priest, renowned cookbook author, and host of "Breaking Bread with Father Dominic," is on a mission to revive these traditions. "Bread for Easter is one way of bringing some tradition and meaning back to the holiday," he emphasizes. Here are two of his cherished brunch recipes:
French Toast Custard Casseroles
Ingredients:
- 1 egg
- 2 tablespoons whole or reduced-fat milk
- 2 thick or 3 medium slices of day-old bread (store-bought works)
- 2 tablespoons chopped pecans
- 1/3 cup maple-flavored syrup
- 1 tablespoon butter
- 1 small ovenproof bowl (about 5" x 2")
Instructions:
1. Preheat oven to 350°F. Lightly coat the ovenproof bowl with cooking spray or butter.
2. Trim bread slices to fit the bowl.
3. In a larger bowl, whisk together the egg and milk. Soak the bread slices in this mixture until absorbed.
4. Combine the nuts and syrup at the bottom of the ovenproof bowl, and dot with butter.
5. Place soaked bread on top, ensuring they don’t reach past the bowl's lip.
6. Place the bowl on a baking sheet to catch drips, and bake for 30-35 minutes, until lightly browned and firm.
7. Let it set for 10 minutes, invert the bowl onto a plate, remove, and serve.
Ham and Cheese Braid
Ingredients:
- 1 package active dry yeast
- 1¼ cups warm milk (100-110°F)
- 1 tablespoon sugar
- 1 tablespoon vegetable oil
- 1½ teaspoons salt
- 1 egg
- 3 to 3½ cups all-purpose flour
- 1½ cups coarsely chopped ham
- 1½ cups shredded sharp cheddar cheese
- ½ cup chopped walnuts (optional)
- 1 egg white, beaten with 1 tablespoon water
Instructions:
1. Dissolve yeast in warm milk in a medium bowl. Add sugar, egg, salt, and oil. Stir well.
2. Mix in 3 cups of flour, and knead until a soft dough forms (6-8 minutes). Add remaining flour as needed.
3. Oil a bowl, place the dough inside, cover with a towel, and let it rise for about one hour or until doubled.
4. Mix ham, cheese, and optional nuts in a bowl.
5. Roll out dough to 10" x 18" and place filling lengthwise in the center. Press it slightly.
6. Cut the outer dough into diagonal strips, and fold them over the filling, alternating sides.
7. Transfer to a greased 9" x 13" cake pan, cover, and let rise for 30 minutes.
8. Brush with egg white wash and bake at 400°F for 30 minutes, or until golden, ensuring the filling temperature reaches about 160°F.
Father Dominic's recipes not only offer delicious Easter brunch options but also help us reconnect with the deeper traditions of the holiday.
