- 2 tablespoons white wine vinegar- Juice of 1/2 lime
- 1/4 cup plus 1 tablespoon extra-virgin olive oil
- 2 tablespoons minced fresh chives
- 1 tablespoon minced fresh basil
- Salt and pepper to taste
Instructions:
1. Rinse quinoa in a medium pot with water, then strain. Add the broth and bring to a boil over high heat. Reduce the heat and simmer uncovered until the liquid is absorbed, about 15 minutes.2. Allow quinoa to cool, then gently toss it with feta, almonds, vegetables, and vinaigrette. Serve and enjoy.
Basil-Chive Vinaigrette Instructions:
1. Combine vinegar and lime juice in a small bowl.2. Gradually whisk in olive oil until smooth.
3. Stir in chives and basil, seasoning with salt and pepper to taste.
Roasting Almonds:
Spread sliced almonds in an ungreased baking pan and roast in a 350°F oven for 10 minutes or until golden brown and fragrant, stirring once or twice for even browning.
