Gum 101: Fascinating Facts to Chew On

Chewing gum holds a unique spot in American culture. Whether it’s freshening breath, keeping astronauts healthy, or curbing snack cravings, gum has many uses. One gum maker claims that if all the pieces they’ve sold were stacked, they’d reach halfway to the moon!

Since its introduction in 1960, sugarless gum has been a favorite, now available in a variety of flavors and even varieties that help whiten teeth. But where do these inventive ideas come from? The answer might surprise you.

Many of today’s popular gums are developed at the Cadbury Schweppes Americas Confectionery Science & Technology Center in New Jersey. As part of Cadbury Schweppes, a leading name in confectionery and beverages, this center is behind favorites like Dentyne and Bubblicious. Their latest creation, Trident Splash™, is the first sugar-free gum with a liquid center, available in flavors like peppermint with vanilla and strawberry with lime. According to its makers, it can even help clean your teeth after meals.

Creating gum is more complicated than it might seem. Dr. Barbara Raphael, head of the center, explains that crafting a perfect gum can require up to 70 ingredients, a big leap from early versions made from tree resin and powdered sugar.

"High-quality, long-lasting gum requires a complex flavor system," Dr. Raphael says. They start with a familiar flavor and build from there, often using "top notes" for a unique twist. This involves adding unexpected flavors to the base using a high-tech process and some trial and error. For example, Dentyne Fire blends warm notes with cinnamon, while Dentyne Ice mixes cool notes with peppermint or spearmint.

Texture plays a crucial role in the gum experience, too. The team uses varied ingredients to perfect the gum’s feel. "Ingredients range from liquids and soft pastes to free-flowing granules and different solids," Dr. Raphael notes.

Combining these ingredients in the right proportions and under precise conditions ensures the gum meets consumer expectations. Fortunately, the team has perfected this process. The company produces around 65 billion pieces of gum annually for consumers in the US, Canada, and Latin and South America.
