Backset, which comes from the base of the still and is acidic, is crucial for maintaining proper pH levels in the cooker and fermenters. Rutledge emphasizes the fusion of science and art in distillation, carefully monitoring grains from arrival through to maturation."I'm after a rich, sweet aroma," he says. "You must have quality flavors from the fermentation stage. Mistakes in distillation can't solve subpar ingredients."
