Grilling hamburgers is one of my earliest and most cherished memories of backyard gatherings. Our family often came together on weekends for delightful hamburger and ice cream suppers, as we like to call them here in Texas. I fondly remember sitting atop the old ice cream freezer while my dad, uncles, and granddad took turns cranking the handle attached to the water-soaked wooden bucket.

In those days, our humble grill might resemble one you'd take to the beach today. Yet, we felt like we were living in luxury, anticipating a delicious feast. The ice cream was often flavored with crushed pineapple, or, if we were lucky, someone brought fresh, ripe peaches to blend into the vanilla mixture.

These cookouts were a special treat for the whole family, filled with laughter and playful fun. Around the age of ten, I proudly took on the responsibility of grilling the hamburgers. Building the charcoal fire in our old grill tested my Boy Scout skills, and once the charcoal turned a fine white ash, the grilling commenced.

Thick, juicy T-Bone steaks and chicken fajitas are treats too. Fajitas are fun because everyone can customize their own, wrapping them up in large flour tortillas.

Grilling today is just as enjoyable as it was back then. Though the old three-legged grill has been replaced by a large cast iron smoker and grill, the joy remains. I still have a gas grill for everyday convenience, but nothing beats firing up the trusty smoker.

Now, my great nieces and nephews run and play as we serve homemade peach ice cream with "Nana's" cookies. One day, I think I'll bring out the old hand-cranked ice cream freezer. They're missing out on a classic part of family cookouts?"sitting on the freezer, holding it down while their dads, uncles, and granddad take turns cranking.
